Chicken with orange on a bed of spinach

Ingredients: (for 4 people)

  • 120 gr. of chicken breast
  • 20 gr. of toasted almonds
  • 10 gr. of finely chopped almonds
  • one and a half oranges
  • 10 spinach leaves
  • 2 tablespoons of extravirgin olive oil
  • salt and pepper as required

Method:

Cut the chicken into pieces and brown in a non-stick pan until golden brown. Add the juice of half an orange and continue cooking
until the juice has been absorbed.
Serve on a bed of spinach leaves, with slices of orange, and the toasted almonds.  Sprinkle with finely chopped almonds,
a little salt and pepper and dress with olive oil.
